Snickers Cupcakes in a Jar
Over the weekend I made some Snickers Cupcakes in a Jar. I really like the jar option, it makes it even easier to give cupcakes as gifts or take with a meal to friends. Top with a lid and a cute ribbon and label and you are good to go!
These Snickers Cupcakes were inspired by a recipe from My Baking Addiction. The recipe uses a cake mix so it is super easy! I made a few changes to the cake and cupcake centers, but the frosting stayed the same. Delicious!
Snickers Cupcakes Makes 2 dozen cupcakes
1 devils food cake mix
3 eggs, room temperature
1 1/4 cup water
1/2 cup oil
1/2 cup mayonnaise or sour cream
Preheat oven to 350 degrees F. Line 24 cups of muffin tins with paper liners.
In a large bowl, mix together the cake mix, oil, eggs, water and mayo. Spoon batter into the prepared pans. Bake for 18-22 minutes, or until center is set. Cool cupcakes thoroughly on wire rack.
Caramel Frosting
2 sticks unsalted butter; room temperature
1/2 cup shortening
2 teaspoons pure vanilla extract
1 1/2 pounds confectioners’ sugar
1/3 cup caramel topping; plus more for drizzling
1/4 teaspoon salt
Chopped Snickers Bars for Garnishing
Cream the butter and shortening in the bowl of an electric or stand mixer. Add vanilla, salt and caramel syrup and combine. Begin adding in the sugar and mixing thoroughly after each addition.
Once the cupcakes have cooled, fill a pastry bag with a small tip. Push tip through top of cupcake and fill. If you want something extra yummy push small piece of snickers bar into the filling.
Cut cupcakes horizontally into 2 or 3 pieces. Place bottom piece in the jar first. Top with frosting, chopped snickers and caramel. Repeat and enjoy.
