Microwave Coffee Cup Scramble
2 eggs, 2 tb milk, 2 tb shredded cheese, salt and pepper to taste coat a 12 oz microwave safe coffee mug with cooking spray and add eggs and milk beat until blended with fork. Microwave on high 45 seconds, stir and microwave until eggs are almost set 30 - 45 seconds longer. top with cheese and season with salt and pepper. other versions: mix cheeses when blending egg and use some of your fav spices to taste...also if you have a shallow coffee cup use 1 egg and don't scramble but cook for 25 - 40 seconds depending on your taste of fried egg...runny or hard and it makes perfect round fried egg for a snack or sandwich or bagel....muffin...enjoy and have fun
